Ingredients
- 2 lb. ripe tomatoes
- 1/2 lb. fresh mozzarella cheese
- 1 c. packed fresh basil leaves
- 2 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1 tsp. salt
- 1/4 tsp. coarsely ground black pepper
Instructions
- In medium bowl, combine tomatoes with their juice, mozzarella, basil, olive oil, vinegar, salt, and pepper, stirring gently to mix well. Allow sauce to stand at room temperature at least 15 minutes or up to 1 hour to develop flavor.
- Each cup: About 150 calories, 8 g protein, 8 g carbohydrate, 12 g total fat (4 g saturated), 26 mg cholesterol, 340 mg sodium.
