Ingredients

2 tbsps parmesan cheese 2 large egg whites 1 package spinach

Instructions

1. Drain spinach really well. You can use a potato ricer. 2. Put all ingredients in a bowl and mix well. 3. Spray skillet with cooking spray (such as Pam) or olive oil. 4. Flatten the spinach mix in the pan. 5. Cook for 8-10 minutes on medium heat. 6. If needed, garnish with low fat ranch dressing.
