Betty demonstrates how to make Versatile Pizza Sauce. This is a sauce that can be used for topping a pizza, as a sauce for any kind of pasta, or as a dipping sauce for breadsticks. Versatile Pizza Sauce 1 ½ tablespoons extra-virgin olive oil 1 cup chopped green pepper 1 cup chopped onion 3 cloves garlic, minced 2 (28-ounce) cans diced canned tomatoes, drained (Save juice, in case you want to thin the sauce.) 4 teaspoons dried oregano 4 teaspoons dried basil 4 teaspoons dried parsley ½ teaspoon salt, or to taste ½ teaspoon freshly-ground black peppercorns 1 tablespoon sugar (optional) In a large deep skillet over low to medium heat, sauté green pepper, onion, and garlic in olive oil, until softened. Remove from heat and let cool for 2 minutes. Meanwhile, place drained tomatoes in bowl of blender. Add oregano, basil, parsley, salt, black pepper and sugar (optional). Add sauteed vegetables and blend until pureed. Place mixture back into large deep skillet and bring to a boil over low heat. Simmer, covered, on top of the stove, stirring occasionally, until the mixture thickens into a sauce. This will take about 30 minutes to 1 hour, depending on how thick you like the sauce. You may serve this immediately over pasta or with breadsticks. It can also be used as a pizza topping.
