Pumpkin Coconut curry is an amazing dish; pumpkin cooked in a yummy fresh grated coconut, poppy seed and cashew nut paste, spices cooked in coconut milk. http://www.vahrehvah.com/pumpkin-coconut-curry Ingredients: Pumpkin 250 g Poppy seeds 2 tb Cashew nut 50g Grated coconut ½ cup Green chilly 3 n Mustard seeds 1 ts Cumin seeds 1 ts Fenugreek seeds ¼ ts Onion chopped 1 n Salt Curry leaves 2 sprig Coconut milk ½ c Sugar 1 ts Tamarind juice 2 tb Oil 2 tb Directions: Heat the pan add poppy seeds and cashew nuts roast them and add grated coconut sauté it and add chopped green chilly make them in to a paste. Heat oil in a pan add mustard seeds the mustard seeds is splatter, add cumin seeds, fenugreek seeds, chopped onions, salt, curry leaves, add pumpkin pieces and poppy seeds paste, water, mix it well and cook till the pumpkin is tender, and add coconut milk, put the lid on cook for some time and add sugar, tamarind juice let it cook for some time then add chopped coriander leaves.
