1 lb (450g) chicken breast, 1 cup (190g) brown rice, 2 cups (200g) broccoli florets, 1 red bell pepper, 1 cup (150g) snap peas, 1/4 cup (60ml) low-sodium teriyaki sauce, 1 tbsp (15ml) olive oil, Salt and pepper to taste
1. Cook the brown rice according to package instructions. 2. While the rice is cooking, heat the olive oil in a pan over medium heat. 3. Add the chicken breast to the pan and cook until no longer pink in the middle. 4. Remove the chicken from the pan and set aside. 5. In the same pan, add the broccoli, bell pepper, and snap peas. Cook until the vegetables are tender. 6. Slice the cooked chicken and return it to the pan. 7. Pour the teriyaki sauce over the chicken and vegetables and stir to combine. 8. Divide the cooked rice between two meal prep containers. Top with the chicken and vegetable mixture.
