Ingredients

2 medium zucchinis (US: 2 cups, Metric: 500g), 1 cup black beans (US: 1 cup, Metric: 240g), 1 cup corn (US: 1 cup, Metric: 175g), 1 cup diced tomatoes (US: 1 cup, Metric: 240g), 1/2 cup shredded cheese (US: 1/2 cup, Metric: 50g), 1 teaspoon cumin (US: 1 tsp, Metric: 5g), 1 teaspoon chili powder (US: 1 tsp, Metric: 5g), salt and pepper to taste

Instructions

1. Cut the zucchinis in half lengthwise and scoop out the centers. 2. In a bowl, mix black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. 3. Fill the zucchini halves with the mixture. 4. Top with shredded cheese. 5. Air fry at 375F (190C) for 10 minutes or until cheese is melted and zucchini is tender.
