4 egg whites (US)/100g egg whites (metric), 1 cup spinach (US)/30g spinach (metric), 1 whole wheat tortilla (US)/45g whole wheat tortilla (metric), 1/4 cup shredded cheese (US)/30g shredded cheese (metric), 1/2 avocado (US)/100g avocado (metric), salt and pepper to taste
Instructions
1. Heat a non-stick skillet over medium heat. 2. Add the egg whites, season with salt and pepper, and scramble until cooked. 3. Add the spinach and cook until wilted. 4. Warm the tortilla in a dry skillet or microwave. 5. Place the cooked egg whites and spinach on the tortilla. 6. Top with shredded cheese and slices of avocado. 7. Roll up the tortilla, tucking in the ends. 8. Serve warm.
