Ingredients

1 cup of Quorn chicken pieces (US) / 240 grams (Metric), 1 cup of mixed vegetables (US) / 150 grams (Metric), 2 tablespoons of Thai green curry paste (US) / 30 grams (Metric), 1 can of coconut milk (US) / 400 ml (Metric), 1 tablespoon of olive oil (US) / 15 ml (Metric), 1 tablespoon of soy sauce (US) / 15 ml (Metric), 1 clove of garlic, minced, 1 teaspoon of ginger, grated, Salt to taste

Instructions

Step 1: Heat the olive oil in a pan. Step 2: Add the garlic and ginger and sauté until fragrant. Step 3: Add the Quorn chicken pieces and cook for 5 minutes. Step 4: Add the mixed vegetables and cook for another 5 minutes. Step 5: Stir in the Thai green curry paste. Step 6: Pour in the coconut milk and soy sauce. Step 7: Let it simmer for 10 minutes. Step 8: Season with salt. Step 9: Serve hot.
