  • 1 1/2 teaspoons freshly ground black pepper

  • 8 ounces ground pork
  • 1/2 cup finely grated Asiago cheese
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 tablespoons coarsely chopped fresh sage
  • 1 teaspoon freshly ground black pepper
  • 1 (1 pound/454 g) package round wonton wrappers (60 wonton wrappers)
  • 1 egg, whisked for egg wash
