Red wine vinegar and clover honey really brighten up the flavors in one these berry shrub cocktails. Serve it up at a party for a perfectly summery and refreshing sip.
Ingredients
- 1/4 cup clover honey
- 1/4 cup red wine vinegar
- 1/2 teaspoon black pepper
- 2 cups fresh blackberries
- 1/2 cup gin
- 1 1/2 cups soda water
- 4 (2-inch) lemon rind strips
- Garnish: fresh blackberries
Instructions
- Whisk together honey, vinegar, and pepper in a bowl. Add 2 cups blackberries; let stand 45 minutes, mashing occasionally. Add gin; chill 15 minutes. Transfer mixture to a small pitcher. Stir in soda water and ice. Rub lemon rind strips around rims of 4 rocks glasses. Pour cocktail into glasses. Add rind to each glass. Garnish, if desired.
