The Deen Bros' Lighter Slow Cooker Smoked Pork, Lentil, and Sauerkraut Soup is an easy and filling weeknight meal

Ingredients

  • 2 (32 oz) containers reduced-sodium chicken broth
  • 1 (16 oz) package reduced-sodium sauerkraut, rinsed and drained
  • 1 (10 oz) package mushrooms, sliced
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup lentils, rinsed and drained
  • 1 large tomato, chopped
  • 3/4 lb boneless smoked pork chops, fully-cooked, trimmed and cut into 1-inch pieces

Instructions

  1. Combine the broth, sauerkraut, mushrooms, onion, carrots, celery, lentils, and tomato in a 5 or 6 quart slow cooker. Cover and cook until the lentils are tender, 4 to€“ 6 hours on high or 8 to€“ 10 hours on low. Add the pork chops during the last 30 minutes of cooking time and heat through.
