- 1 cup finely chopped red onion
- 1/2 cup chopped fresh cilantro
- 4 to 5 tablespoons fresh lime juice
- 1/4 cup chopped fresh mint

- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon cracked black peppercorns
- 2 large ripe tomatoes, chopped
- 3 Persian cucumbers, halved lengthwise and cut crosswise into 1/4-inch slices
- 1 Honeycrisp apple, cored and finely chopped (about 1 1/2 cups)
- 1 serrano chile, finely diced (about 1 tablespoon)
