Ingredients

  • 1 package Oreo cookies
  • 5 tbsp. butter

Instructions

  1. For the Oreo crust: Place the Oreo cookies in a resealable plastic bag and use a rolling pin to crush them into a fine crumble. Add the melted butter and toss to combine.
  2. Place a sheet of parchment paper on the bottom of a 9-inch by 9-inch baking dish. Pour in the Oreo mixture, pressing it down to form a crust.
  3. For the Mocha Truffle Layer: Melt the unsweetened baking chocolate in 30-second intervals in the microwave until fully melted. Set aside to cool.
  4. Beat butter and vanilla extract on medium speed until light and fluffy. Turn mixer to low speed and gradually mix in powdered sugar, 2 cups at a time. Once it's combined, mix in the heavy cream, coffee and salt.
  5. For the Ganache Layer: Put semisweet chocolate chips in a large mixing bowl. Heat the heavy cream in a saucepan over medium heat, cooking just until small bubbles form. Pour the warm cream on top of the chocolate chips and let sit for 5 minutes, until the chocolate has mostly melted. Stir to combine, then pour on top of the truffle bars.
  6. Stick the tray of truffle bars in the refrigerator to set for one hour. Serve.
