Recipe by Rose Dunnington This breakfast sandwich is a real treat, but it's hard to make it a surprise. The aroma of frying sausage and eggs will wake up everyone in your house!

Ingredients

  • A hunk of ground sausage (A pound of sausage makes six to eight patties.)
  • 1 egg
  • Pinch of ground pepper
  • dash Hot sauce
  • An English muffin
  • 1 slice Cheddar cheese
  • A thick slice of tomato

Instructions

  1. Heat the skillet on a medium burner. Tear a chunk of sausage and form the sausage into a patty. Wash your hands.
  2. Check the skillet. Is it hot enough to make a drop of water sizzle? Time to cook the sausage patty, about 5 minutes on each side or until it's deep brown and has a crispy crust.
  3. Meanwhile, beat the egg, pepper, and hot sauce together in a bowl with the fork until uniformly blended.
  4. When the sausage is done, drain it between layers of paper towels (mash it to get as much grease out as possible). Pour the grease out of the skillet, too. (Not in the sink! Ask a parent how to dispose of grease.) Then pour the egg mixture into the skillet and let it cook. Scramble the egg with the spatula as it cooks. Cook for 2 to 3 minutes, until set. Turn off the stove.
  5. While the egg cooks, put the cheese on the top half of the English muffin. Broil both halves of the muffin 2 to 3 minutes until the cheese melts and the bottom half is toasted. Turn off the oven and use the oven mitts to remove the baking sheet.
  6. When everything's ready, construct your sandwich: bottom muffin, sausage patty, egg, tomato slice, and cheesy top muffin half.
