Ingredients

  • 1 pint heavy cream
  • 2 c. semisweet chocolate chips

Instructions

  1. Make the chocolate ganache: Place a saucepan over medium heat. Pour in the heavy cream, and once it comes to a simmer, remove from heat and add chocolate chips. Whisk until combined. Place in fridge to cool for at least 25-30 minutes.
  2. Make the caramel: In a separate saucepan, place the caramels and water over medium heat. Stir occasionally, melting the caramels until a sauce has formed. If necessary, add water until it's easily spreadable; about as thick as maple syrup or honey.
  3. Pour caramel sauce into the bottom of a clear serving bowl. Hold a spoon over the bowl of caramel sauce and gently pour the chocolate ganache onto the spoon, letting it spill over onto the caramel sauce. This will break the surface tension and create a gentler pour, so the caramel and chocolate remain two separate layers. Top with a crumbled shortbread cookie and a drizzle of any remaining caramel sauce.
  4. Serve with shortbread cookies for dipping (or fresh fruit).
