Ingredients
- 1 pork tenderlon
- 1 tbsp. onion powder
- 1 tsp. red chili flakes
- 1 tbsp. Black pepper
- 2 tbsp. chopped fresh gingerroot
- 1 tbsp. Serrano chili
- 2 tbsp. fresh garlic
- 3 tbsp. soy sauce
- 2 tbsp. oyster sauce
- 1/2 tsp. sesame oil
Instructions
- For pork: Combine all ingredients in a re-sealable plastic bag and marinate for 30 minutes.
- For vinaigrette: Combine all ingredients and set aside.
- For salsa: Combine watermelon, cucumber, and avocado together and very gently fold with vinaigrette, chill.
- For lettuce "shell": Trim off soft dark green end, cut and separate into 4-inch long taco shell-shaped pieces, drain and chill.
- To cook: Preheat grill to medium heat, grill pork for 2 minutes on one side, turn, grill 1 more minute, remove from heat, let rest 3 minutes, then rough chop pieces so that they are about 1/2-inch pieces.
- For assembly: Fill lettuce shells with pork, top with salsa, devour!
