Cheesy chicken with salsa that's sure to please.

Ingredients

1 oz sour cream, reduced fat 1/4 tsp olive oil 4 breasts, bone and skin removed chicken breasts 1 cup chunky salsa 2 stalks green onions 8 oz sharp cheddar cheese, fat free

Instructions

1. Put 4 boneless, skinless chicken breasts into an 8x8" pan sprayed with olive oil. 2. Pour one small jar of chunky salsa (like Pace brand or any no sugar added thick salsa) over the chicken. 3. Bake in 350 °F (175 °C) oven for about 25 minutes, checking occasionally. 4. Remove the chicken dish and put the sharp cheddar cheese (or whatever cheese variety you like) and some chopped green onions on top and return to oven until cheese is melted and bubbly. 5. Top with a dollop of low-fat sour cream when serving, if desired.
