Ingredients
- 4 plain flour tortillas
- 4 clove garlic
- 1/2 c. thinly sliced roasted red pepper
- 1/2 c. crumbled goat cheese
- 2 tsp. pickled jalapeño peppers
- salt and pepper
Instructions
- Heat oven to 400 degrees F. On heavily buttered cookie sheet, place two tortillas. Spread half of mashed garlic over each tortilla; top each with half of red pepper, goat cheese, and jalapeño pepper, to taste. Season with salt and pepper.
- Press remaining two tortillas on top of filling to seal well and form quesadillas. Using large spatula, turn quesadillas so buttered side is uppermost.
- Bake 4 to 5 minutes; turn; bake 4 to 5 minutes longer until quesadillas are piping hot and golden. Serve immediately, cutting each into 6 wedges, and garnishing each wedge with jalapeño slices, if desired.
