Ingredients

  • 2 lb. brisket
  • 2 tbsp. salt
  • 2 tsp. Black pepper
  • Ruffled potato chips

Instructions

  1. Preheat oven to 425 degrees F.
  2. Bring brisket to room temperature—allow it to sit out at least 20 minutes. Right before cooking, cover all sides with salt and pepper. Place in a shallow roast pan.
  3. Roast for 25 minutes, then turn oven down to 350 degrees. Roast for another 25 minutes, or until center is 140 degrees.
