Topped with an insanely delish—and easy—pineapple salsa, these pork chops take on a fresh, tropical flavor.
Ingredients
3 c. chopped pineapple
1 red bell pepper, diced
1/2 small red onion, chopped
4 scallions, thinly sliced
Juice of 1 large lime
2 tbsp. extra-virgin olive oil
kosher salt
Freshly ground black pepper
4 bone-in pork chops, fat trimmed
Instructions
Make pineapple salsa: In a medium bowl, combine pineapple, red pepper, onion, scallions, lime juice, and olive oil and season with salt and pepper.
Season pork chops generously with salt and pepper. In a large skillet over medium-high heat, heat oil. Add pork chops and sear until golden and the internal temperature reaches 145 degrees F, about 3 minutes per side. Remove skillet from heat and let rest 3 minutes.
Serve with pineapple salsa.
