Ingredients

  • 3 c. chopped pineapple
  • 1 red bell pepper, diced
  • 1/2 small red onion, chopped
  • 4 scallions, thinly sliced
  • Juice of 1 large lime
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 4 bone-in pork chops, fat trimmed

Instructions

  1. Make pineapple salsa: In a medium bowl, combine pineapple, red pepper, onion, scallions, lime juice, and olive oil and season with salt and pepper.
  2. Season pork chops generously with salt and pepper. In a large skillet over medium-high heat, heat oil. Add pork chops and sear until golden and the internal temperature reaches 145 degrees F, about 3 minutes per side. Remove skillet from heat and let rest 3 minutes.
  3. Serve with pineapple salsa.
