- 3 c. chopped pineapple
- 1 red bell pepper, diced
- 1/2 small red onion, chopped
- 4 scallions, thinly sliced
- Juice of 1 large lime
- 2 tbsp. extra-virgin olive oil
- kosher salt
- Freshly ground black pepper
- 4 bone-in pork chops, fat trimmed
Instructions
- Make pineapple salsa: In a medium bowl, combine pineapple, red pepper, onion, scallions, lime juice, and olive oil and season with salt and pepper.
- Season pork chops generously with salt and pepper. In a large skillet over medium-high heat, heat oil. Add pork chops and sear until golden and the internal temperature reaches 145 degrees F, about 3 minutes per side. Remove skillet from heat and let rest 3 minutes.
- Serve with pineapple salsa.
