Starting with a boxed cake mix makes these jam-filled treats super simple, but feel free to use your favorite recipe for yellow cake.
Ingredients
- 1 box yellow cake mix
- 1 1/4 c. strawberry or raspberry jam
- 3 c. confectioners’ sugar
- 2 stick butter
- 1/4 c. whole milk
- 1/2 tsp. vanilla extract
- 1 pinch salt
- sliced strawberries
Instructions
- Prepare cake mix for cupcakes as label directs.
- With mixer on medium speed, beat sugar, butter, milk, vanilla, and salt until smooth and well combined.
- Fill piping bag with 3/4 cup jam; snip tip off of bag. To fill cupcakes, insert tip of piping bag into top of cooled cupcake. Squeeze about 2 teaspoons jam into center. Repeat with remaining cupcakes.
- Without cleaning piping bag, cut tip to fit large round piping tip. Add buttercream and remaining 1/2 cup jam, alternating. Pipe onto cupcakes in swirl pattern. Garnish with strawberries, if desired.
