Ingredients

  • 1/2 cup (1 stick) butter
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup rainbow sprinkles
  • Top with: Vanilla (or birthday cake) ice cream and additional sprinkles

Instructions

  1. Preheat the oven to 350 degrees.
  2. Melt butter in a heated 8-inch cast iron skillet. Whisk in sugar and vanilla. Remove from heat and allow pan to cool about 5 minutes.
  3. Carefully whisk eggs into the sugar mixture.
  4. In a small bowl, combine the flour, baking soda, and salt. Add the dry mixture to the skillet until just combined. Fold in white chocolate chips and sprinkles.
  5. Bake for 15-18 minutes, or until beginning to turn golden on top and around the edges but still soft in the center. Don’t overbake. Remove from the oven and let cool for 5 minutes.
  6. Sprinkle with extra sprinkles and top with scoops of vanilla or birthday cake ice cream or decorate with frosting, as desired.
