Betty demonstrates how to make Sweet and Puffy Elephant Ears. This is a terrific snack to serve during a sports event, such as the upcoming Super Bowl!
Sweet and Puffy Elephant Ears
¾ cup milk
½ teaspoon salt
1 tablespoon sugar
1 ½ ounces shortening (Crisco)
1 (0.75-ounce) packet active dry yeast
2 cups all-purpose flour
peanut oil, for frying (You may use any vegetable oil.)
confectioner's sugar, for coating (This is the same as icing sugar or powdered sugar.)
In a small saucepan, combine milk, salt, sugar, and shortening. Heat, over medium heat, until shortening melts and sugar is dissolved. Remove from heat and let cool until lukewarm (110 degrees [F]). Sprinkle in yeast. Stir and let sit until foamy, about 10 to 15 minutes. Place yeast mixture in large bowl. Stir in flour to make a dough. Place dough on floured surface and knead until smooth. Cover with plastic wrap and let rise 30 minutes. Flatten dough into a thick circle. Using a pastry cutter, divide dough into 8 equal pieces. Roll each into a ball, which will be about 1 ½ inches across. Roll each ball into a thin circle (or oval). Fry each circle, individually, in 1-inch peanut oil that has been heated to 375 degrees [F] in a skillet. When the bottom side becomes golden, use tongs to turn the dough circle, browning the other side. Remove from oil and drain on paper toweling. While warm, sprinkle elephant ear with confectioner's sugar on both sides and transfer to a serving platter. Repeat the frying and coating process for the remaining dough circles. Yield: 8 elephant ears. These are best served warm, right after coating, but they may also be served at room temperature. These would be a dramatic addition to your Super Bowl party! --Enjoy!
