Sambar is a lentil based vegetable stew or chowder based on a broth made with tamarind popular in South India. http://www.vahrehvah.com/fat-free-sambhar-be-fit-be-cool-aapi Ingredients: Ingredient Measure Units Red chilies 4 Number Mustard seeds 1/4 Tsp Cumin seeds 1/4 Tsp Fenugreek seeds 1/4 Tsp Curry leaves 2 Sprigs Hing Pinch Onions (chopped) 1 Cup Salt To taste Turmeric powder 1/4 Tsp Green chilies 4 Number Drum stick 1 Number Carrot dices 1 Cup Pumpkin dices 1 Cup Egg Plant dices 1 Cup Radish dices 1/2 Cup Cauliflower florets 1/2 Cup Tomatoes 1 Cup Sambar powder 2 Tsp Fresh coconut (grated) 1/4 Cup Tamarind juice 1/2 Cup Red split gram dal (cooked boiled) 1 Cup coriander (chopped) 1/2 Bunch Directions -- Method: 1. In a hot pan add red chilies, mustard seeds, cumin seeds, when they crackle, fenugreek seeds, curry leaves, hing, chopped onions, turmeric powder and mix it cook for few minutes. 2. Now add water, green chilies, salt, drumstick, carrot, pumpkin, egg plant, radish, cauliflower, tomatoes, sambar powder, freshly grated coconut and by putting the lid on cook for 7-8 minutes. 3. Add tamarind juice, and cook for 2 minutes. 4. Now add boiled split red gram dal mix and cook for another 2 minutes 5. Finally add chopped coriander and serve hot with rice and papad.
