This is a very traditional and authentic Tamil Brahmin recipe prepared with brinjals. Brinjal Rasavangi. Rasavangi is nothing but a kootu (stew) made using bringal or pumpkin. http://www.vahrehvah.com/brinjal-rasavangi Ingredients: Mustard seeds 1/2 Teaspoons Tour dal 1 Cup Pea nuts 15 Grams Jaggery 1 Tablespoons Coconut grated 2 Tablespoons Coriander seeds 1 Tablespoons Pepper corns 8 Numbers Urad dal 1 Teaspoons Chana daal 1 Teaspoons Red chilly 3 Numbers Coconut oil 2 Tablespoons Tamarind juice 1 Cup Turmeric 1/4 Teaspoons Salt To Taste Egg plant 4 Numbers Hing 1 Pinch Curry leaves 2 Springs Directions: 1. Heat water in a pan add turmeric, salt, egg plant (cut them in to small pieces) and add tamarind juice, let it cook till egg plant is tender, 2. Heat coconut oil in a pan add red chilly, chana daal, Urad dal, pepper corns, coriander seeds, cook this till golden colour, add grated coconut, cook it for few minutes, and put it in the blender make a coarse paste. 3. In the egg plant add jaggery, and add made masala, cook for some more minutes, then add boiled peanuts, boiled tour dal, grated coconut cook in a slow flame for 5 minutes, 4. Heat coconut oil in a pan add red chilly, mustard seeds, hing, curry leaves 5. take the tadka pure in to the egg plant curry.
