Ingredients

1 lb (450g) of grass-fed beef tallow, 2 cups (300g) of mixed berries (blueberries, blackberries, raspberries), 1 cup (150g) of red grapes, 1 medium (150g) sweet potato, 1 tbsp (15g) of olive oil, salt and pepper to taste

Instructions

1. Preheat the oven to 375°F (190°C). 2. Melt the beef tallow in a pan over medium heat. 3. Toss the berries, grapes, and diced sweet potato in the melted tallow. 4. Spread the mixture on a baking sheet. 5. Roast for 20 minutes, or until the sweet potatoes are tender. 6. Drizzle with olive oil, season with salt and pepper, and serve.
