Ingredients
- 2 large zucchini, spiralized
- 1 1/2 c. flour
- 1 tsp. Italian seasoning
- kosher salt
- Freshly ground black pepper
- Vegetable oil, for frying
- 1/3 c. parmesan, grated
- 1/2 c. marinara, warmed
Instructions
- Heat about 1 in of oil in a large heavy-bottomed pot over medium heat.
- Meanwhile, whisk together flour, Italian seasoning, 2 tsp. salt and 1/2 tsp pepper. Dredge the zucchini spirals in the flour mixture. Toss until evenly coated.
- Work in batches to fry the zucchini. When the oil is hot, pick up a small mound of spirals with tongs, shake off excess flour and carefully drop in the oil. Use the tongs to separate clumping so that the spirals fry evenly. Fry until golden brown and crispy, about 2-3 minutes. Drain on paper towels. Season with more salt and pepper, to taste.
- Sprinkle with Parmesan and serve with warm marinara sauce.
