Ingredients
- 3/4 lb. gluten-free soba (Japanese buckwheat noodles)
- 1/4 c. gluten-free soy or tamari sauce
- 2 tbsp. rice vinegar
- 1 tbsp. vegetable oil
- 1 tsp. sugar
- 1 clove garlic
- 1 tsp. finely grated peeled fresh ginger
- 3/4 lb. shredded cooked chicken
- 6 scallions
- 2 1/4 c. thinly sliced red cabbage
Instructions
- In a large pot of boiling water, cook soba according to package instructions. Meanwhile, in a large bowl, combine soy sauce, vinegar, oil, sugar, garlic, and ginger.
