Ingredients

  • 3/4 lb. gluten-free soba (Japanese buckwheat noodles)
  • 1/4 c. gluten-free soy or tamari sauce
  • 2 tbsp. rice vinegar
  • 1 tbsp. vegetable oil
  • 1 tsp. sugar
  • 1 clove garlic
  • 1 tsp. finely grated peeled fresh ginger
  • 3/4 lb. shredded cooked chicken
  • 6 scallions
  • 2 1/4 c. thinly sliced red cabbage

Instructions

  1. In a large pot of boiling water, cook soba according to package instructions. Meanwhile, in a large bowl, combine soy sauce, vinegar, oil, sugar, garlic, and ginger.
