Ingredients

1 lb. skirt steak kosher salt Black pepper 3 ears corn, kernels stripped 1/2 c. cherry or grape tomatoes, halved 1 scallion, thinly sliced Juice of 1 lime

Instructions

Heat grill or grill pan over medium-high heat. Season steak with salt and pepper and drizzle with oil. Grill 6 to 8 minutes per side for medium rare, then transfer steak to a cutting board, cover with foil, and let sit, 10 minutes. Meanwhile, make corn salsa: In a bowl, mix together corn, tomatoes, scallion, and lime juice and season with salt. Slice steak against the grain and serve topped with corn salsa.
