Cuban-Inspired Sandwich - PCOS-Friendly Recipe
This Cuban-Inspired Sandwich is a PCOS-friendly recipe.
Nutrition per Serving
Ingredients
- 1/2 cup Mayonnaise
- 4 teaspoons Stone Ground Mustard, Or More To Taste
- 4 Sandwich Buns (I Like Homemade)
- 2 Tablespoons Plus 2 Teaspoons Soft Butter
- 1-1/3 cup Warm Pulled Pork
- 8 slices Warm Ham
- 12 Large Dill Pickle Slices
Instructions
- In a small bowl, whisk together mayonnaise and mustard.
- Toast sandwich buns and spread both sides with butter. Smear about 2 tablespoons of the mustard sauce on the top half of the bun.
- Place 1/3 cup of the warm pulled pork on the bottom half of your bun. Top with 2 slices of ham. Place 3 pickle slices on top. Squish the saucy half of the bun on top. Repeat with remaining ingredients to make 3 more sandwiches.
- Note: You can also add cheese if you like. If you do, I recommend toasting the sandwich panini-style so the cheese melts.
