Ingredients
- 1 pork tenderloin (1 1/4 lb.)
- 1 tbsp. melted butter
- 1/4 tsp. salt
- 2 c. finely chopped cantaloupe
- 1/4 c. fresh cilantro, finely chopped
- 1/4 c. Orange segments
- 2 tbsp. lime juice
- 1/2 tsp. chili powder
- 1/4 tsp. salt
Instructions
- On baking sheet, brush pork tenderloin with butter; season with salt. Roast at 145 degrees F for 20 minutes or until cooked.
- Combine cantaloupe, cilantro, orange segments, lime juice, chilip owder, and salt.
- Slice pork and serve over mixed greens topped with melon salsa.
