Ingredients

  • 1 pork tenderloin (1 1/4 lb.)
  • 1 tbsp. melted butter
  • 1/4 tsp. salt
  • 2 c. finely chopped cantaloupe
  • 1/4 c. fresh cilantro, finely chopped
  • 1/4 c. Orange segments
  • 2 tbsp. lime juice
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt

Instructions

  1. On baking sheet, brush pork tenderloin with butter; season with salt. Roast at 145 degrees F for 20 minutes or until cooked.
  2. Combine cantaloupe, cilantro, orange segments, lime juice, chilip owder, and salt.
  3. Slice pork and serve over mixed greens topped with melon salsa.
