1 pork tenderloin (1 1/4 lb.) 1 tbsp. melted butter 1/4 tsp. salt 2 c. finely chopped cantaloupe 1/4 c. fresh cilantro, finely chopped 1/4 c. Orange segments 2 tbsp. lime juice 1/2 tsp. chili powder 1/4 tsp. salt

Instructions

On baking sheet, brush pork tenderloin with butter; season with salt. Roast at 145 degrees F for 20 minutes or until cooked. Combine cantaloupe, cilantro, orange segments, lime juice, chilip owder, and salt. Slice pork and serve over mixed greens topped with melon salsa.
