Ingredients

1/2 cup sugar 2 large eggs 2 tablespoons butter, melted 1 tablespoon all-purpose flour 1 cup low-fat milk 3/4 cup unsweetened shredded coconut 1 teaspoon vanilla extract 1 teaspoon coconut extract 1 (9 inch) unbaked pie shell

Instructions

Preheat oven to 350 °. Beat the sugar and eggs in a large bowl until pale yellow. Whisk in the butter and flour until blended. Add the milk, coconut and both extracts. Pour into the prepared pie shell, transfer to a baking sheet, and bake until set, about 40 minutes. Chill pie for 2 hours before serving.
