Ingredients

  • 4 bone-in pork loin chops, 1/2 inch thick (about 1 lb), trimmed of fat
  • 2 teaspoons salt-free extra-spicy seasoning blend
  • 2 teaspoons vegetable oil
  • 1/2 medium onion, sliced
  • 1 can (14.5 oz) zesty diced tomatoes with jalapeño peppers, undrained

Instructions

  1. Sprinkle both sides of pork chops with seasoning blend. In 12-inch nonstick skillet, heat oil over medium-high heat. Add onion; cook about 2 minutes, stirring occasionally, until slightly tender. Push onion to one side of skillet.
  2. Add pork to other side of skillet. Cook about 3 minutes, turning once, until browned. Add tomatoes. Heat to boiling; reduce heat. Cover; cook 4 to 8 minutes or until pork is no longer pink in center.
