Ingredients

  • 4 large zucchini, halved lengthwise
  • 2 c. shredded rotisserie chicken
  • 4 oz. cream cheese, softened
  • 1 c. shredded Cheddar
  • 1/4 c. buffalo sauce
  • 1/4 c. sliced green onions, plus more for garnish

Instructions

  1. Preheat oven to 350 degrees F. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl.
  2. In a large bowl, combine chicken, cream cheese, 3/4 cup cheddar, buffalo sauce, and green onions and season with salt and pepper.
  3. Spoon chicken mixture into the zucchini boats and sprinkle with remaining 1/4 cup cheddar.
  4. Bake until zucchini is tender and cheese is golden, about 15 minutes.
  5. Garnish with more green onions and serve.
