Ingredients

1 medium cauliflower (500g), 1 medium onion (150g), 2 cloves garlic, 1 bell pepper (150g), 2 tablespoons olive oil (30ml), 1/2 teaspoon salt (2.5g), 1/2 teaspoon black pepper (1g), 4 large eggs, 1 avocado (200g), 2 tablespoons chopped fresh parsley (7.6g)

Instructions

1. Chop the cauliflower, onion, garlic, and bell pepper. 2. Heat the olive oil in a large skillet over medium heat. 3. Add the chopped vegetables, salt, and pepper to the skillet and cook for 10 minutes, stirring occasionally. 4. Make four wells in the vegetable mixture and crack an egg into each well. 5. Cover the skillet and cook for another 5 minutes, or until the eggs are cooked to your liking. 6. Serve the hash topped with sliced avocado and chopped parsley.
