Ingredients
- 1/2 cup heavy cream
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 1 1/2 cups pecans, coarsely chopped
- 4 tablespoons butter
- 1 tablespoon vanilla extract
- 1 teaspoon salt
Instructions
- Prepare a baking sheet with wax paper along with 2 tablespoons with non-stick cooking spray.
- In a medium heavy-bottomed saucepot over high heat; add the cream, light brown sugar and granulated sugar. Bring to a boil. Allow the mixture to cook without stirring, about 5 minutes or until it starts to caramelize.
- Add the pecans and butter and swirl the pan to combine. Remove the pan from the heat and let cool for 10 minutes. Add the vanilla and salt. Stir the mixture to cool while using as few strokes as possible.
- Using the prepared tablespoons, drop the mixture with rounded tablespoons onto the prepared baking sheet, if the mixture firms up, stir in a few drops of hot water to loosen it. Let the candy cool before serving. Store in an airtight container.
