Ingredients

  • 1 can unsweetened coconut milk
  • 1 can carrot juice
  • 1/2 c. freshly grated carrot
  • 1/2 c. sugar
  • 1 tbsp. grated fresh peeled ginger
  • 1 tbsp. fresh lime juice

Instructions

  1. Combine ingredients in blender; purée until smooth.
  2. Pour mixture into ice pop molds.
  3. Freeze until solid, at least 8 hours.
