Ingredients

1 can unsweetened coconut milk 1 can carrot juice 1/2 c. freshly grated carrot 1/2 c. sugar 1 tbsp. grated fresh peeled ginger 1 tbsp. fresh lime juice

Instructions

Combine ingredients in blender; purée until smooth. Pour mixture into ice pop molds. Freeze until solid, at least 8 hours.
