Our ultimate tuna melt is topped with Manchego, a mellow sheep's milk cheese from Spain--though you could use Muenster, Cheddar, or smoked mozzarella in its place.

Ingredients

2 can water-packed tuna 3 tbsp. mayonnaise 2 scallions 2 tsp. fresh lemon juice 4 slice 7-grain bread 8 thin rings pickled jalapeño pepper 1/4 lb. Manchego cheese

Instructions

In medium bowl, stir together tuna, mayonnaise, scallions, and lemon juice; combine well. Spread mixture on 4 slices 7-grain bread. Top each with 2 jalapeño pepper rings. Sprinkle with Manchego cheese. Broil on broiler pan 6 inches from heat 3 to 4 minutes, or until cheese is melted.
