Ingredients

  • 1 batch Chocolate Chocolate-Chip Cookies
  • 6 c. dulce de leche ice cream

Instructions

  1. Place about 1/2 cup of the dulce de leche ice cream, softened, on the bottom of a cookie and spread it almost to the edges; then top with another cookie. Repeat to make 12 ice cream sandwiches.
  2. Place on a baking sheet in the freezer for 1 hour to firm up the ice cream. To store in the freezer for up to 1 week, wrap each sandwich individually in plastic wrap, then put in a resealable bag.
