Ingredients

  • 1 can kidney beans
  • 4 tbsp. salsa
  • 1 c. shredded pepper Jack cheese
  • 1 avocado
  • 4 burrito-size tortillas

Instructions

  1. Divide salsa, cheese, beans, and avocado on half of each of the tortillas. Fold in half and press to flatten slightly. Heat 12-inch skillet on medium and add 2 quesadillas. Cook 8 minutes or until golden on both sides. Repeat. Serve with salsa.
