DOUGH:
3 Cups of Plain Flour
1/4 Cup of Caster Sugar (Super Fine White Sugar) 1 Tablespoon for Yeast
7g Sachet of Dried Yeast
1/4 Cup of Warm Water
3/4 Cup of Milk
1 Teaspoon of Vanilla Extract / Essence
50g Butter (melted)
1 Egg (lightly beaten)
FILLING:
100g Butter (very soft)
1/2 Cup of Brown Sugar
1/4 Cup of Caster Sugar
2 Tablespoons of Ground Cinnamon
Preparation Time: About 20 minutes Rising Time
Cooking Time: About 30 minutes
MAKES ABOUT 16 SCROLLS

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly.
