Ingredients
- 2 cups water
- 1 cup quinoa, rinsed
- 1/2 teaspoon salt, divided
- 1 tablespoon minced fresh basil
- 1 tablespoon minced fresh cilantro
- 1-1/2 teaspoons minced fresh mint
- 1 teaspoon grated lemon peel
Instructions
- In a small saucepan, bring water to a boil. Add quinoa and 1/4 teaspoon salt. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed.
- Remove from the heat. Add the basil, cilantro, mint, lemon peel and remaining salt; fluff with a fork.
