Ingredients

2 cups water 1 cup quinoa, rinsed 1/2 teaspoon salt, divided 1 tablespoon minced fresh basil 1 tablespoon minced fresh cilantro 1-1/2 teaspoons minced fresh mint 1 teaspoon grated lemon peel

Instructions

In a small saucepan, bring water to a boil. Add quinoa and 1/4 teaspoon salt. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat. Add the basil, cilantro, mint, lemon peel and remaining salt; fluff with a fork.
