Ingredients

  • 5 smoked bacon slices
  • 1 red onion, sliced
  • 3/4 cup heavy cream
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 large eggs, lightly beaten
  • 1/2 (17.3-oz.) package frozen puff pastry sheets, thawed
  • 1 1/2 cups (6 oz.) freshly shredded Swiss cheese, divided
  • 1 cup coarsely chopped green onions
  • 1/3 cup grated Parmesan cheese
  • 1 large egg yolk
  • 2 tablespoons milk
  • Pea-and-Green Onion Soup

Instructions

  1. Preheat broiler with oven rack 7 inches from heat. Cook bacon in a skillet over medium heat until crisp; crumble. Reserve 1 Tbsp. drippings. Place red onion on a baking sheet; brush with drippings. Broil 4 minutes per side; reduce oven temperature to 400 °. Whisk together cream, salt, pepper, and eggs.
  2. Unfold pastry; roll to a 12-inch square on a floured surface, and fit into a greased 9-inch tart or quiche pan. Sprinkle 1 cup Swiss cheese and half of crumbled bacon onto crust; top with green onions and red onions.
