Ingredients

  • 1 package farfalle or corkscrew pasta
  • 1 1/2 tsp. salt
  • 1 2 1/2-pound purchased rotisserie chicken
  • 1 bunch spinach
  • 1 lb. seedless red grapes
  • 1/4 c. grated Parmesan cheese
  • 3 tbsp. extra-virgin olive oil
  • 2 tbsp. red wine vinegar
  • 1 tsp. coarsely ground black pepper

Instructions

  1. Prepare farfalle as label directs, using 2 teaspoons salt in water; drain. Rinse farfalle with running cold water to cool; drain.
  2. Meanwhile, remove and discard skin and bones from chicken; tear meat into bite-size pieces. Rinse spinach; drain well. Coarsely chop spinach. Cut each grape in half if large.
  3. In large bowl, toss farfalle with chicken, spinach, grapes, Parmesan cheese, 1 1/2 teaspoons salt, and remaining ingredients to mix well.
