- 2 c. all-purpose flour
- 1 c. confectioner's sugar
- 2 sticks unsalted butter, softened
Instructions
- To make the crust: Preheat oven to 350 degrees. Line a 9 x 11 pan with parchment paper. In a large bowl, mix the flour and confectioner's sugar together. Add in butter and incorporate together with your hands until it forms a crumbly crust. Press the mixture into prepared pan, and bake for 20 minutes, or until golden brown. Remove from oven.
- To make the pumpkin layer: In large bowl of an electric mixer, beat cream cheese, sugar, pumpkin puree, pumpkin pie spice, and eggs on medium speed until well blended. Pour over hot base. Return to oven and bake for another 20 to 25 minutes, or until set and dry in center. Remove from oven.
- To make the cheesecake layer: In small bowl, mix sour cream, sugar, and vanilla extra. Pour mixture over pumpkin layer and spread evenly. Bake for an additional 5 minutes or until topping is set. Cool completely, about 2 hours.
