This Pecan Pie Bars is a PCOS-friendly recipe.
Nutrition per Serving
Ingredients
- 1 package yellow cake mix (reserve 3/4 c. for filling)
- 1 stick butter, softened
- 1 egg
Instructions
- Preheat the oven to 350 °F, then use a stick of butter to grease the bottom and sides of a 9"x13" baking dish.
- For the Cake Layer: Set aside 3/4 cup yellow cake mix for the filling, then pour the rest into a large mixing bowl. Add the butter and egg, beating with an electric mixer until well combined. Press the dough into the bottom of the baking dish, and bake for 17-20 minutes, or until the dough is lightly golden.
- For the Pecan Pie Topping: In a large bowl, combine remaining cake mix, brown sugar, corn syrup, vanilla, cinnamon and eggs. Beat for about 1-2 minutes to fully combine the ingredients. Pour this mixture over the cake crust. Sprinkle with pecans. Bake for 30-35 minutes, or until the filling has set (if you move the pan, the center shouldn't jiggle).
- Cool for about an hour, then serve.
