Ingredients
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Salt and pepper
- 1/2 cup olive oil
- 12 cups shredded red cabbage (1/2 of large head)
- 1/2 cup shredded green cabbage
- 1/2 onion, thinly sliced
- 2 carrots, shredded
- 2 tablespoons caraway seeds
Instructions
- In a small bowl, whisk vinegar, lemon juice, mustard, 1/4 tsp. salt and 1/8 tsp. pepper. Keep whisking while adding oil in a slow stream. Dressing will thicken.
- Combine cabbage, onion and carrots in a large bowl. Sprinkle caraway seeds over slaw and add dressing. Toss well and season with salt and pepper.
- Cover and chill for at least 2 hours before serving.
