Ingredients

  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper
  • 1/2 cup olive oil
  • 12 cups shredded red cabbage (1/2 of large head)
  • 1/2 cup shredded green cabbage
  • 1/2 onion, thinly sliced
  • 2 carrots, shredded
  • 2 tablespoons caraway seeds

Instructions

  1. In a small bowl, whisk vinegar, lemon juice, mustard, 1/4 tsp. salt and 1/8 tsp. pepper. Keep whisking while adding oil in a slow stream. Dressing will thicken.
  2. Combine cabbage, onion and carrots in a large bowl. Sprinkle caraway seeds over slaw and add dressing. Toss well and season with salt and pepper.
  3. Cover and chill for at least 2 hours before serving.
