Ingredients

  • 20 dried mushrooms
  • 1 lb mushrooms
  • 1/2 leek
  • 1 small carrot
  • 1 small onion
  • 2 small tomatoes
  • 1 tbsp butter
  • 8 cups water
  • 1/4 cup whole milk

Instructions

  1. Soak the dried mushrooms in 2 cups warm water for 30 minutes. Save the liquid, and rinse the mushrooms several times. Chop them.
  2. Chop the onion, leek, carrot and fresh mushrooms. Sauté in butter with the dried chopped mushrooms.
  3. Add the remaining water and the chopped tomatoes. Also add the mushroom water, after straining it through a coffee filter.
  4. Add a bay leaf, salt and pepper to taste. Bring soup to a boil, and then let it simmer till carrots are soft.
  5. Stir in the milk. Serve.
  6. Note: you can also add chopped fresh dill and parsley.
