Ingredients

  • 1/2 c. sour cream
  • 2 tbsp. prepared horseradish, squeezed of excess moisture
  • kosher salt
  • Freshly ground black pepper
  • 1/4 c. Chopped fresh mint
  • 1 medium baguette, sliced and toasted
  • 9 oz. cooked whole beets (canned, jarred or packaged), sliced into half-moons
  • 1 lemon

Instructions

  1. In a bowl, combine sour cream, horseradish, and 1/4 teaspoon pepper. Stir in mint. Spread horseradish mixture on bread, top with beets, sprinkle with a pinch each salt and pepper, then zest lemon over top.
