Beet Crostini - PCOS-Friendly Recipe

Ingredients
- 1/2 c. sour cream
- 2 tbsp. prepared horseradish, squeezed of excess moisture
- kosher salt
- Freshly ground black pepper
- 1/4 c. Chopped fresh mint
- 1 medium baguette, sliced and toasted
- 9 oz. cooked whole beets (canned, jarred or packaged), sliced into half-moons
- 1 lemon
Instructions
- In a bowl, combine sour cream, horseradish, and 1/4 teaspoon pepper. Stir in mint. Spread horseradish mixture on bread, top with beets, sprinkle with a pinch each salt and pepper, then zest lemon over top.
