Ingredients

1/2 c. sour cream 2 tbsp. prepared horseradish, squeezed of excess moisture kosher salt Freshly ground black pepper 1/4 c. Chopped fresh mint 1 medium baguette, sliced and toasted 9 oz. cooked whole beets (canned, jarred or packaged), sliced into half-moons 1 lemon

Instructions

In a bowl, combine sour cream, horseradish, and 1/4 teaspoon pepper. Stir in mint. Spread horseradish mixture on bread, top with beets, sprinkle with a pinch each salt and pepper, then zest lemon over top.
