Ingredients

  • 1 tablespoon olive oil
  • 1 lb Italian turkey sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth, homemade or low-sodium (canned)
  • 2 (14-1/2 oz) cans diced tomatoes, plus their juices
  • 2 cups tomato sauce
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup ziti noodles
  • 1/4 cup Parmesan cheese, grated
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 loaf garlic bread, for serving
  • salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large Dutch oven or soup pot. Once hot, add the sausage, onion, and garlic, and sauté until sausage is browned and vegetables are tender, about 8 minutes. Season the mixture with salt and pepper.
  2. Stir in the broth, tomatoes, tomato sauce, Italian seasoning, red pepper flakes and bring to a boil, reduce heat to a simmer, and cook for 20 minutes.
  3. Add the noodles and cook for 10 more minutes. Stir in the Parmesan cheese.
  4. Add soup to bowls and top with mozzarella cheese. Serve with garlic bread.
